Cheddar Egg Muffin

Serves 1



1 egg

dash salt

dash pepper

Non-stick cooking spray

1 sprouted grain English muffin, toasted

1 Tablespoon reduced-fat shredded Cheddar cheese

1 slice tomato



  1. Scramble egg with salt and pepper. Pour into a small ramekin (bowl) that has been sprayed with non-stick cooking spray.
  2. Microwave for 30 seconds. Remove from microwave. Sprinkle with cheese and microwave for 10 additional seconds or until eggs are firm.
  3. Remove from ramekin and place on half of toasted muffin.
  4. Top with tomato and remaining half muffin.
